One of the first ever Panamanian coffees we had the pleasure of roasting, and it  did not disappoint. 
This lot from Hacienda Barbara is an articulate expression of Panamanian terroir. We selected this lot for its structural clarity, and its clean, sweet finish. Elevated by a traditional washed process it delivers a clean, yet subtle vibrancy and layered sweetness in the final cup. 
In the cup we're tasting: sweet plum, apricots, almond and red apple. 
BEST BREWED ON FILTER:

Filter: Origami with origami / cafec filter papers:

18g in 280g out - medium - coarse

40g bloom, @40s pour to 120g, @ 1:20 pour to 150g, @ 1:45 pour to 280g

this is just a recommendation, and timings are suggestions, experiment with pours, grind size and ratios - see what you can get out of it, let us know how you get on. 

 

THE PRODUCER

Hacienda Barbara, led by Hunter Tedman and Linda Arauz, are known for producing some of Panama’s most exciting specialty coffees through a combination of sustainable farming, careful varietal selection, and innovative processing.

 

This washed Catuai comes from their farm in Jaramillo, a high-elevation area of Boquete renowned for its cool climate, rich volcanic soils, and conditions that help develop clarity, balance, and vibrant character in the cup.

> WHEN WILL MY COFFEE BE ROASTED?

All our coffees are roasted to order. we roast and ship on the same day or within 48 hours of order.

You’ll find the exact roast date printed on the box.

> HOW IS BEST TO BREW MY COFFEE?

Each and every coffee brews differently and requires certain tweaks to make perfect, but we have our recommended brew guide in the coffee overview section to help you out with a recipe to get you started. If you're struggling, please reach out to us at: hello@carettacoffee.com and we'll be glad to help you out.

> HOW LONG SHOULD I REST MY COFFEE?

We recommend resting the coffee for at least 2 weeks from roast date to allow the coffee to degas and open up its true flavour. For our coffees, we roast relatively light, so to get the best possible flavour experience we recommend 2-3 weeks of resting.

> HOW MUCH DOES SHIPPING COST?
